Scottish summer options could include multi-day Munro bagging, big climbing/scrambling routes on Ben Nevis, Lochnagar, The Dubh Loch, The Shelterstone, Ardveriekie Wall, Beinn a'Bhuird, Glencoe, Beinn Eighe, The Cuillin, sea stacks, Orkney/The Hebridies, etc. (so long as you avoid Dundee). The ability to drive to find good conditions and avoid midgies is useful.
